Panko is derived from a specially baked, crustless whitebread, which is then broken into light, flaky crumbs.
Preparation:
Dust lightly with flour. Dip in egg wash(egg white and water or milk). Roll in panko. Brown in hot oil (watch for burning) and finish in a hot oven, if desired.
